Inside-Out Rolls with Duck

Ingredients

  • 0.25 Cucumber
  • 160 g Japanese eel (Unagi)
  • 2 small avocados
  • 2 nori sheets
  • 360 g cooked sushi rice
  • Wasabi (tube)
  • 4 tbsp Teriyaki sauce
  • 2 tbsp roasted sesame seeds
  • 4 tbsp pickled ginger
  • soy sauce

Instructions

    Preheat oven to 200°C.

    Wash cucumber, quarter lengthwise and deseed.

  3. 3.

    Cut eel into wide strips and warm in the oven for about 3 minutes.

    Halve avocados, pit, peel, and slice flesh thinly. Cut nori sheets in half. Distribute rice on them, flip so rice side faces down. Spread wasabi on nori, top with cucumber and avocado. Roll from the long side and fully cover with eel strips. Cover with plastic wrap and shape using a bamboo mat.

    Cut each roll into 6 pieces. Sprinkle teriyaki sauce and sesame seeds over rolls. Serve with ginger, wasabi, and soy sauce.
