Indian Lentil Dish (Dal)

Ingredients
- 300 g red lentils
- 1 onion
- 2 Garlic cloves
- 1 bay leaf
- 1 Green Chili Pepper
- 1 tbsp grated ginger
- 1 tsp turmeric
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp salt
- 25 g coconut milk
- 1 tbsp Lemon Juice
- coriander (for garnish)
Instructions

Add the lentils to a pot with enough water to cover them well. Peel and finely chop the onion and garlic. Add together with the bay leaf, halved chili pepper, ginger, and turmeric. Place a slightly tilted lid on and cook over medium heat for about 15 minutes until the lentils are tender, stirring occasionally. If needed, add more water. The mixture should finish thick but not watery.

Season with cumin, coriander, and salt to taste. Let stand for about 20 minutes to develop flavor.

Remove the bay leaf and chili pepper, season with coconut milk and lemon juice. Reheat the dal while stirring. Stir in some chopped coriander, serve in bowls garnished with coriander.
