Ice from Sorrel

Ingredients

  • 200 ml milk
  • 50 g yogurt
  • 75 g sugar
  • 1 egg
  • 2 egg yolks
  • 1 tsp lemon zest
  • 30 g sorrel
  • 100 ml whipping cream

Instructions

    Bring the milk to a boil. In a double boiler, whisk together the yogurt, sugar, egg, egg yolks and lemon zest until smooth. Slowly pour the hot milk into the mixture while stirring constantly, creating a thick custard (do not let it boil!).

    Wash the sorrel and pat dry. Set aside a few nice leaves. Finely chop the rest and fold into the custard. Cool over a cold water bath and whisk until chilled. Whip the cream to stiff peaks and fold in. Pour into a shallow metal dish, cover and freeze for at least 4 hours, stirring every 30 minutes to prevent large crystals (or use an ice maker). Scoop with an ice scoop and garnish with sorrel leaves.
