Hungarian-Style Beef Stew

- 250 g onions
- 3 Garlic cloves
- 1 kg beef (from the shank)
- 3 tbsp clarified butter
- 3 tbsp sweet paprika powder
- 1 tsp hot paprika powder (rose pepper)
- Salt
- black pepper
- 1 tbsp cumin
- 2 tbsp Tomato paste
- 1 l beef broth (canned)
- 500 g tomatoes
- 2 red bell peppers
- 1 green bell pepper
- 500 g starchy potatoes

Peel and finely chop the onions and garlic. Cut the beef into cubes. Heat the clarified butter in a large pot and sear the beef pieces in batches until browned. Add all the beef to the pot, then add the onions and garlic; sauté over medium heat and sprinkle with paprika powder. Season with salt, pepper, and cumin, and stir in the tomato paste. Pour in the hot beef broth, cover, and simmer on low heat for 1 hour.

Halve the bell peppers, remove seeds, wash, and cut into thin strips. Boil the tomatoes briefly, shock in cold water, peel, and cut the flesh into large cubes. Peel, wash, and dice the potatoes into small cubes. Mix everything under the beef and simmer for another 30 minutes, then season with salt and pepper to taste.
