Ingredients
- 1 l milk (cow, sheep or goat; minimum 3.5% fat)
- 1 lemon
- Salt
- herbs to taste
- tomatoes to taste
- whole‑grain bread to serve
Instructions

Pour the milk into a pot and heat it without boiling. Cut the lemon in half and squeeze out the juice.

While stirring, add the lemon juice to the hot milk until the milk proteins curdle and solid pieces separate from the clear liquid.

Line a sieve with cheesecloth and place it over a bowl. Transfer the curdled mixture into the cloth and let it drain until a creamy consistency is reached.

Release the cream cheese from the cloth and season with salt. Serve with herbs, additional spices, tomatoes and whole‑grain bread as desired.
