Ingredients
- 8 elderflower buds
- 1 egg
- 175 ml dry white wine
- 125 g flour
- 1 tbsp sugar
- 1 tsp vanilla sugar
- 0.5 tsp grated orange zest
- 2 tbsp liquid butter
- fat for frying
- powdered sugar for dusting

Do not wash the elderflower buds, just shake and read them.

Separate the egg. Mix the yolk with the wine, flour, sugar, vanilla sugar and orange zest into a smooth dough. Fold in the butter and let the dough rest about 20 minutes. Beat the egg white with a pinch of salt until stiff peaks form and fold it into the dough. Gently press each elderflower bud through the dough and fry them one by one in hot fat. Drain on kitchen paper and dust with powdered sugar before serving.
