Holiday Roast

Ingredients

  • 3.5 kg young turkey (1 young turkey)
  • Salt
  • black pepper (freshly ground)
  • 250 g minced beef
  • 250 g Mushrooms
  • 3 eggs
  • 125 g butter
  • 2 onions
  • 1 bunch parsley
  • 1 tbsp grated marjoram
  • 2 whole grain rolls
  • 100 ml milk (3.5% fat)

Instructions

    Wash and pat the turkey dry, then season the inside and outside with salt and pepper.

    Peel the onions, wash and shake off the parsley, finely chop both and sauté in 50 g butter. Soak the rolls in milk, squeeze out excess liquid, tear into pieces and briefly sauté with them. Let everything cool, mix with the minced beef, eggs, and seasonings (salt, pepper, marjoram), taste, fill the turkey, and sew it closed.

    Place the turkey in a preheated oven at 180 °C (convection: 160 °C; gas: level 2–3) on the lowest rack for about 3 hours. Occasionally brush with butter during roasting. Initially cover loosely, then remove the cover in the last 45 minutes to allow the turkey to brown.

    Arrange everything on a platter with your choice of sides and serve the Holiday Roast.
