Hirsesalat vegan

Ingredients

  • 120 g Hirse
  • 160 g Peas (frozen)
  • 2 EL Lemon juice
  • 3 TL Tahini
  • 2 TL Pumpkin seed oil
  • salt
  • pepper
  • 60 g Baby spinach
  • 40 g Almonds
  • 1 handful Watercress

Instructions

    Bring millet to a boil with double the amount of water. Simmer on low heat for approx. 15 minutes until all liquid is absorbed.

    Meanwhile, add the peas to a pot with very little water and cook for approx. 2 minutes over medium heat. Then drain, rinse with cold water and drain. Mix lemon juice, tahini, pumpkin seed oil, salt and pepper into a dressing. Add a little water if needed.

    Wash the spinach and spin dry. Chop the almonds. Fluff the millet and mix with peas, dressing and spinach. Season with salt and pepper. Serve vegan millet salad sprinkled with chopped almonds and watercress.
