Heringssalat is a recipe with fresh ingredients from the seawater fish category.
Ingredients
- 1 small stalk of leek (ca. 250 g)
- 1 firm potato (from yesterday)
- 1 apple (ca. 200 g)
- 1 tbsp Lemon Juice
- 60 g raisins
- Salt
- Pepper (freshly ground)
- 6 herring fillets (pickled in oil 550)
- 250 g sour cream
- 4 sprigs parsley (for garnish)

Clean the leek, make shallow cuts lengthwise, wash thoroughly and slice into thin rings. Peel the potato and dice it small. Wash the apple, quarter it, remove the core, finely dice and place in a bowl.

Immediately mix with lemon juice and fold in the potato, leek, and raisins. Season with salt and pepper. Pat the herring dry on paper towels and cut into bite‑sized pieces. Spread the sour cream onto shallow plates. Arrange the apple‑leek‑potato mixture and the herring atop the sour cream bed and serve garnished with parsley.
