Herring Salad

Ingredients
- 400 g Potatoes
- 3 endive leaves
- 2 Spring Onions
- 2 Tomatoes
- 8 matjes herring fillets
- 4 tbsp white wine vinegar
- Salt
- Pepper
- 1 pinch sugar
- 3 tbsp oil
- 1 Tbsp parsley
- 1 tbsp dill sprigs
- 125 g heavy cream
Instructions

Peel, wash, and boil the potatoes in salted water for about 25 minutes until tender. Drain, let them cool, cut into cubes.

Wash the endive leaves, pat dry, and slice into strips. Clean the spring onions, trim, and cut into rings. Wash the tomatoes and quarter them.

Pat the herring fillets dry and cut into 3 cm wide pieces. Whisk together vinegar, salt, pepper, sugar, and oil; season to taste. Toss gently with potatoes, herring, tomatoes, and endive.

Serve the salad on plates. Mix parsley and dill with the sour cream, then spoon over the salad for a creamy finish.
