Ingredients

  • 600 g salmon fillet (with skin, 4 fillets)
  • 7 tbsp olive oil
  • 10 g herbs (1 handful; dill, parsley)
  • Salt
  • coarse pepper (from the mill)
  • coarse sea salt (for sprinkling)
  • 1 Organic lemon

Instructions

    Soak cedar plank in cold water for at least 1 hour. While it soaks, rinse salmon fillets, pat dry and brush with 2 tbsp oil. Place remaining oil in a small bowl. Wash herbs, shake dry, remove leaves and tips, then finely chop. Add herbs, salt, and pepper to the oil.

    Drain plank, place on the grill rack of a hot pellet grill, cover and heat for 5 minutes until the wood lightly smokes.

    Sprinkle coarse sea salt over the plank, lay salmon fillets skin side down onto the plank, brush the top with herb oil while reserving some oil. Grill covered for about 20 minutes.

    Rinse lemon, pat dry, cut into wedges. Remove plank from grill, brush salmon fillets with remaining herb oil and serve with lemon wedges.
