Ingredients

  • 4 rabbit legs
  • Salt
  • black pepper (freshly ground)
  • 2 tbsp oil
  • 2 Garlic cloves
  • 3 tomatoes
  • 1 red bell pepper
  • 2 carrots
  • 1 bunch mixed herbs
  • 250 ml vegetable broth

Instructions

    Season the rabbit legs with salt and pepper.

    Peel and finely chop the garlic. Wash, quarter, core, and dice the tomatoes. Clean, halve, core, and cube the bell pepper. Peel and cube the carrots. Chop the herbs.

    Brown the rabbit legs in a pot over hot oil on both sides.

    Add the garlic and sauté briefly, then pour in the broth, cover and simmer for 10 minutes. Add the vegetables and continue to simmer covered for another 25 minutes. Just before the end of cooking, add the herbs, season the sauce with salt and pepper.
