Herb Roasted Perlhuhn

Ingredients

  • 1 Perlhuhn (ca. 1,4 kg)
  • Salz
  • Pfeffer
  • 2 EL Pflanzenöl
  • 2 Zweige Rosmarin
  • 1 Stiel Salbei
  • 100 ml Geflügelfond
  • 80 ml Weißwein
  • 3 Knoblauchzehen

Instructions

    Preheat the oven to 180°C with fan and top heat.

    Rinse the Perlhuhn, pat dry and cut into 8 pieces. Season with salt and pepper and brown in a heavy skillet in hot oil all around. Deglaze with a little Geflügelfond and Weißwein. Rinse the herbs, shake dry and break apart. Add the pressed garlic to the Perlhuhn and bake for about 30 minutes. Turn the pieces several times during baking and serve from the pan.
