Ingredients
- 24 oysters
- 1 untreated lemon
- 1 handful parsley
- 1 handful chives
- 1 handful basil
- 6 tbsp Olive oil
- Salt
- pepper (from grinder)
Instructions

Rinse the oysters under running water and discard any that are not open. Use an oyster knife to open them and separate the shellfish meat from the shells. Catch the released liquid and strain it through a sieve.

Wash the lemon hot, dry it, grate its zest and squeeze out the juice.

Wash the herbs, shake off excess moisture and blend them together with the oyster liquid, olive oil, salt, pepper, lemon juice and zest in a blender.

Place each oyster back into a shell half and spoon the herb sauce over it. Arrange on a decorative bowl and garnish with young pine needles.
