Herb-Crowned Fish

Simply prepared but always delicious: The fish with herb crown from Spoonsparrow tastes great for the whole family.

Ingredients

  • 4 fish fillets about 160 g each (e.g., salmon or grouper)
  • 3 tbsp olive oil
  • 4 sprigs Parsley
  • 2 sprigs Basil

Instructions

    Preheat oven to 200°C (400°F) with fan and top heat.

    Rinse the fish and place in a greased baking dish. Rinse herbs, shake dry, pick off leaves, finely chop. Peel garlic and finely chop. Wash chili pepper, deseed, and finely chop. Mix garlic and herbs into remaining oil, season with salt and pepper, and spread over the fish. Bake for 10-15 minutes.

    Serve herb-crowned fish with optional vegetables on the side.
