Ingredients

  • 200 g potatoes (2 potatoes)
  • 150 g small sour apples (1 small sour apple)
  • 2 tsp oil (e.g., sunflower oil)
  • 4 eggs
  • 2 tbsp sparkling mineral water
  • Salt
  • Pepper
  • 30 g turkey bacon (2 slices)

Instructions

    Peel the potatoes and grate or slice them thinly.

  2. 2.

    Wash, dry, quarter, core, and dice the apples finely.

  3. 3.

    Heat oil in a non‑stick pan. Fry the potatoes over medium heat, turning frequently for about 10 minutes. After 5 minutes add the apple cubes and continue cooking.

    Meanwhile whisk the eggs with sparkling mineral water in a small bowl, seasoning with salt and pepper.

    Pour the egg mixture into the pan and let it set until firm.

    Fry the turkey bacon slices in another non‑stick pan over medium heat until crisp. Drain on paper towels and pat dry; arrange them atop the Heaven and Earth Omelette.
