Heaven and Earth
Heaven and Earth is a popular combination of potatoes and apples. At Spoonsparrow it follows the classic recipe.
Ingredients
- 1 kg starchy cooking potatoes
- Salt
- 800 g apples (Boskop)
- 1 tbsp Lemon Juice
- 1 tbsp sugar
- a pinch cinnamon
- 2 onions
- 70 g smoked ham
- 400 g blood sausage
- 2 tbsp clarified butter
- 200 ml hot milk (3.5% fat)
- 2 tbsp butter
- Pepper
- nutmeg
Instructions

Peel, wash and roughly cube the potatoes; simmer covered in salted water for about 30 minutes.

Meanwhile quarter the apples, peel and core them, cut into wedges and steam with lemon juice, sugar, cinnamon and 3 tbsp water over medium heat for about 7 minutes.

Peel the onions and slice into rings. Dice the smoked ham. Slice the blood sausage into about 1.5 cm thick pieces.

Heat clarified butter in a large pan; crisp the ham cubes, add onion rings and cook together. Set aside, then brown the blood sausage in the pan fat for 2 minutes on each side.

Drain the potatoes and let them steam dry. Mash them, pour in milk, stir in butter, season with salt, pepper and nutmeg. Crush two thirds of the apples and fold into the potato mash.

Serve the mash on a plate, top with remaining apple wedges and blood sausage slices, drizzle ham and onion rings with pan fat, sprinkle with pepper and serve immediately.
