Ingredients
- 1 Carrot
- 1 onion
- 400 g starchy potatoes
- 600 ml broth
- 2 tbsp Vegetable oil
- 4 slices breakfast bacon
- 300 g sauerkraut (canned)
- Salt
- pepper (ground)
- 50 g crème fraîche (at least 30% fat)
Instructions

Peel and cut the carrot into cubes. Peel and roughly dice the onion. Wash, peel, and cube the potatoes.

Heat the oil in a pot, sauté the onion, carrot, and potatoes briefly, then deglaze with broth and simmer covered for 15-20 minutes over low heat.

Cut the bacon into small pieces and crisp it in a pan; drain on paper towels. Drain the sauerkraut and roughly chop it.

Puree the soup slightly, add the sauerkraut, reheat, and season with salt and pepper. Serve in bowls, sprinkle with bacon, and top each with a dollop of crème fraîche.
