Ingredients

  • 1.2 kg waxy potatoes
  • Salt
  • 2 onions
  • 50 g butter
  • 2 sprigs parsley
  • 100 g salami (sliced)
  • pepper (ground)

Instructions

    Preheat the oven to 160°C fan.

    Peel the potatoes and slice them thinly. Blanch in salted water for 1-2 minutes, then drain well.

    Peel the onions and cut into rings.

    Melt the butter and grease a baking dish. Wash the parsley leaves, dry by shaking, and pluck the leaves off the stems.

    Lay one third of the potato slices in the dish, brush with a little butter, season with salt and pepper, sprinkle half the onion rings, half the parsley, and half the salami on top.

    Add another layer of potatoes, season again, add the remaining onions, parsley, and salami, then finish with a final layer of potatoes.

    Season, pepper, and brush with the remaining butter. Bake in the oven for about 1 hour until golden brown.
