Ingredients
- 1 tbsp butter
- 1 tbsp flour
- 200 ml dry white wine
- 600 ml clear vegetable broth
- 250 g Mainzer Handkäse
- 200 ml whipping cream
- Salt
- nutmeg
- 2 tbsp caraway seeds
- fresh herbs (for garnish, e.g., chives, parsley, dill)
Instructions

Melt the butter in a pot. Sprinkle in the flour, whisk with a wooden spoon and let it brown slightly. Pour in the white wine while stirring vigorously to prevent lumps. Add the broth and simmer gently for about 5 minutes.

Cube the Handkäse. Reduce the heat of the soup and add the cheese. Let it melt for several minutes until fully dissolved.

Meanwhile, whip the cream halfway stiff. Stir it into the finished soup and season with salt and nutmeg. Serve on plates, dusted with a little caraway seed and garnished with fresh herbs.
