Hearty Cabbage Soup

Ingredients
- 500 g white cabbage
- 1 onion
- 50 g bacon
- 3 tbsp oil
- 1 l vegetable broth (instant)
- 20 g flour
- 1 tbsp Tomato Paste
- 1 tbsp sweet paprika powder
- 250 g sour cream
- Salt
- caraway seeds
- 2 Garlic cloves
- pepper (ground)
- 3 slices rye bread
- 1 tbsp butter
- 4 tbsp heavy cream
- paprika powder
Instructions

Dice the bacon into small cubes and lightly brown in oil. Add finely sliced onion, cook until translucent, then remove from heat and stir in paprika powder and tomato paste before adding the broth.

Remove outer leaves from cabbage, quarter lengthwise, trim stem, cut into thin strips, and add to the prepared broth. Simmer with all spices for about 25 minutes. Whisk sour cream with flour until smooth, then quickly whisk into the soup. Bring to a boil briefly and season to taste. Dice rye bread and toast in hot butter.

Serve soup on plates, sprinkle with croutons, and top each portion with a dollop of sour cream lightly dusted with paprika. Serve immediately.
