- 1 head lettuce
- 1 Avocado
- 100 g radishes
- 1 bunch spring onions
- 2 tbsp watercress
- 1 Garlic clove
- 2 egg yolks
- Salt
- Pepper (freshly ground)
- 200 ml rapeseed oil
- Lemon juice
- dandelion flower for garnish

Peel, crush and place the garlic in a bowl. Add the egg yolks, salt and pepper and whisk thoroughly. Then drizzle the oil with a whisk first in drops, then in a thin stream while whisking. When the sauce is thick‑creamy, add lemon juice, taste and refrigerate.

Wash, clean and tear the lettuce into bite‑sized pieces. Wash and trim the spring onions; cut the green parts into thin strips and place them in cold water. Finely chop the white part. Wash, clean and slice the radishes thinly. Peel the avocado, halve it, remove the pit and cut into wedges. Distribute all salad ingredients on bowls and drizzle with the dressing. Serve garnished with dandelion flowers.
