- 6 egg tomatoes
- Sea salt
- 2 tbsp olive oil
- 100 ml balsamic vinegar
- 1 arugula
- 200 g prosciutto (thin slices e.g., Parma)
- 4 buffalo mozzarella balls (~125 g each)

Preheat the oven to 120°C (250°F) with both fan and top heating.

Wash the tomatoes, halve them, cut off the stem ends, and place the halves on a baking tray. Sprinkle with sea salt and drizzle with olive oil. Roast in the oven for about 40 minutes, turning occasionally, until slightly dry but still juicy. Remove from the oven and let cool to lukewarm.

Reduce the balsamic vinegar over gentle heat, stirring occasionally, until it becomes lightly syrupy, then allow to cool.

Rinse the arugula, discard any wilted leaves, and shake off excess water.

Arrange the prosciutto on plates, top with arugula and roasted tomatoes, and place one mozzarella ball in the center of each tomato half.
