Ingredients
- 1.5 kg pork ham steak (cured)
- 4 tbsp Honey
- 4 tbsp Lemon juice
- 0.5 tsp ground ginger
- a pinch cayenne pepper
- 1 tbsp oil
- 200 ml meat stock
- 1 kg small potatoes (red-skinned)
- 150 g herb pesto (jar)
- Salt
- thyme for garnish

Wash the meat, pat dry and tie if necessary. Whisk honey, lemon juice, ginger and cayenne into a marinade. Heat oil in a roasting pan and sear the meat all around. Pour in the meat stock and brush the steak with some glaze. Place the pan in a preheated oven (200°C fan or conventional) and roast the meat for about 90 minutes, glazing it repeatedly with the marinade.

While the meat cooks, wash the potatoes and boil for 20 minutes. Then cut crosswise, spoon pesto into each slit and bake at 200°C for another 5-10 minutes. Slice the meat thinly and arrange on a plate with the potatoes, garnished with thyme.
