Ham Pasta and Leafy Salad

- 400 g rigatoni
- 200 g cooked ham (thin slices)
- 2 tbsp butter
- Salt
- Pepper (freshly ground)
- 2 red chili peppers
- 1 tsp Dried oregano

Remove any fat edge from the ham, then cut lengthwise in half and slice into strips about 1.5 cm wide. Wash the chilies, slit them lengthwise, deseed, remove the white membrane, and dice finely.

Cook the pasta in boiling salted water until al dente, then drain. Reserve a little cooking water. In the meantime melt the butter gently in a small pan, sauté the chili cubes and oregano briefly. Immediately combine the cooked pasta with the pan contents and ham strips. Season generously with coarsely ground pepper and stir in 2–3 tbsp of reserved cooking water. Divide onto four plates and sprinkle with plenty of parmesan shavings; serve immediately. A fresh green salad pairs well.
