Ingredients
- 1 turkey (about 3 kg)
- Salt
- black pepper (freshly ground)
- 1 tbsp thyme
- 1 tbsp sage leaf
- 500 g pumpkin (butternut squash)
- 2 ripe apples
- 1 Shallot
- butter (for the roasting pan)
- fresh herbs for garnish, e.g., thyme, sage, rosemary
Instructions

Preheat the oven to 180 °C (356 °F) with upper and lower heat. Wash the turkey, pat dry, and rub inside and out with salt, pepper, thyme, and sage.

Halve the pumpkin, remove seeds and strings with a tablespoon, peel it, and dice the flesh into small cubes.

Peel, quarter, core, and dice the apples. Peel and finely chop the shallot, then mix it with the pumpkin and apple cubes.

Stuff the turkey with this mixture, tie it with kitchen twine, and place it in a buttered roasting pan.

Roast in the preheated oven for 1½–2 hours, basting frequently with the drippings. Garnish with fresh herbs before serving.
