Ground Meatballs with Coriander Sauce

Ingredients
- 600 g ground pork
- 1 clove garlic
- 1 Shallot
- 1 red chili pepper
- 1 tsp freshly grated ginger
- 2 tbsp freshly chopped coriander leaves
- 1 egg
- 2 tbsp white bread crumbs
- soy sauce
- 3 tbsp vegetable oil
- 2 tbsp red curry paste
- 200 ml coconut milk
- 200 g diced tomatoes (canned)
- coriander leaves for garnish

Place the ground pork in a bowl. Peel and finely dice the garlic and shallot. Wash, deseed, and finely chop the chili pepper. Mix the ginger, garlic, shallot, coriander, and egg into the pork. Add enough bread crumbs to make the mixture workable. Season with soy sauce and form small balls. Fry the balls in 2 tbsp hot oil for 6-8 minutes until golden brown.

Sauté the curry paste briefly in the remaining oil. Deglaze with coconut milk and add the tomatoes. Simmer gently for about 5 minutes. Taste and adjust with soy sauce.

Drain the meatballs on kitchen paper and serve them in bowls with the sauce. Garnish with coriander leaves.

Serve with noodles if desired.
