Ingredients
- 250 g long grain rice
- Salt
- 4 bell peppers (green and red)
- 1 clove garlic
- 1 onion
- 500 g ground beef (beef)
- 1 tbsp plant oil
- 1 tsp tomato paste
- 150 ml meat broth
- 2 tbsp freshly chopped parsley
- chili powder
- 40 g freshly grated cheese e.g. Cotija (or Parmesan)
Instructions

Rinse the rice and cook it in water with twice the amount of salt for about 25 minutes.

Wash, halve, de-stem, and dice the bell peppers. Peel and finely dice the garlic and onion.

Brown the ground beef in hot oil in a pan until crumbly. Add the peppers, garlic, and onions and sauté while stirring for 2-3 minutes. Stir in tomato paste and deglaze with broth. Cook for about 5 more minutes until most liquid has evaporated. Mix in the rice, add parsley, and season with salt and chili.

Serve on bowls and sprinkle with cheese.
