Ingredients

  • 500 g ground beef
  • 1 stale roll
  • 1 tbsp chopped shallots
  • 1 clove garlic (pressed)
  • 1 egg yolk
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp finely chopped parsley

  • 2 Zucchini
  • 1 tbsp Lemon Juice
  • 1 tbsp oil
  • 1 tbsp finely chopped parsley
  • 2 red onions
  • 250 g sour cream yogurt
  • 2 tbsp mango chutney
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp red currant jam
  • 125 ml ketchup
  • red currants (for garnish)

Instructions

    Peel and dice the onions. Mix yogurt with chutney, stir in onions, season with salt and pepper.

    Soak the roll. Sauté shallot and garlic in oil until translucent, then combine with the squeezed roll and remaining ingredients to form a meat dough; shape into small balls.

    Wash, trim, and slice zucchini into finger‑thick rounds. Whisk lemon juice, oil, parsley, salt, and pepper together, then toss zucchini slices in the mixture.

    Thread meatballs alternating with zucchini slices onto skewers, brush with oil, and grill over high heat until golden brown all around (or pan‑fry for about 5 minutes).

    Warm currant jam and stir in ketchup. Garnish with red currants as desired.
