Grilled Zucchini Rolls with Sheep Cheese

Grilled zucchini rolls with sheep cheese from Spoonsparrow are a hit on the grill!

Ingredients

  • 0.5 bunch Chives
  • 500 g zucchini (2 zucchini)
  • Salt
  • 200 g sheep cheese
  • 100 g ajvar
  • 2 tbsp olive oil

Instructions

    Wash the chives, shake them dry and cut them into 2 cm long rolls.

    Clean the zucchini, wash it and use a vegetable peeler to slice it thinly lengthwise.

    Lay the slices on kitchen paper, sprinkle with a little salt and let them draw water for 5 minutes.

    In the meantime, drain the sheep cheese if necessary and cut it into elongated sticks.

    Pat the zucchini slices dry with kitchen paper. Place 2-3 slices slightly overlapping next to each other on the work surface; a total of 16 zucchini rolls should be created.

    Spread each roll with 1 tsp of ajvar and top with sheep cheese. Then roll up the zucchini slices and secure them with a toothpick.

    Place the zucchini rolls on a grill tray and drizzle with oil. Grill for 5-8 minutes on a hot grill. Sprinkle with chives and serve.
