Grilled Tuna Steaks with Mango and Tomato Salsa

Ingredients
- 4 tuna fillets (about 180 g each)
- 1 lime (juiced)
- Salt
- Pepper (freshly ground)
- 1 chili pepper
- 1 ripe Mango
- 2 shallots
- 2 sprigs fresh cilantro
- 3 tomatoes
- 3 tbsp orange juice
- cilantro for garnish

Wash the tuna fillets, pat dry and season with salt, pepper, and lime juice. Wash the chili pepper, slit lengthwise (wear disposable gloves as capsaicin is hard to remove from hands), deseed and finely chop. Peel the mango, cut flesh away from pit and dice finely; reserve the juice.

Peel and dice the shallots. Wash cilantro, shake dry and finely chop leaves. Wash tomatoes, quarter, seed and cut into ~1/2 cm cubes.

Combine mango, tomato, shallot cubes and cilantro with orange juice and reserved mango juice; season with pepper.

Grill tuna fillets on a not-too-hot grill for 2–3 minutes per side. Transfer to warmed plates and spoon mango salsa over the fish. Garnish with cilantro leaves and serve.
