Grilled Pineapple Slices and Vanilla Ice Cream

Ingredients

  • large pineapple
  • 2 tbsp honey
  • 1 tsp grated ginger
  • 2 tbsp lemon juice
  • 1 tbsp butter
  • 1 tbsp lemon zest
  • 1 tbsp pink peppercorns
  • 1 egg yolk
  • 50 g fine brown sugar
  • 50 ml cognac
  • 4 scoops vanilla ice cream
  • powdered sugar (for dusting)

Instructions

    Peel half of the pineapple, remove the core and cut the flesh into 8 rings.

    Mix honey with grated ginger and lemon juice, then brush the pineapple slices with this mixture.

  3. 3.

    Grill the pineapple slices in a hot buttered pan for 3–5 minutes on each side. Add some lemon zest and pink peppercorns. Set the pan aside.

    Whisk the egg yolk with sugar and cognac over a double boiler until creamy.

    Arrange the grilled pineapple slices on plates, top each with half a scoop of ice cream, drizzle with cognac cream, and sprinkle with remaining lemon zest and powdered sugar.
