Grilled or Pan‑Fried Atlantic Cod

  • 1 small Atlantic cod (700-800 g)
  • flour
  • Seasoning
  • Canola oil
  • butter
  • Anchovy butter
  • Lettuce (or roasted potatoes)

    Clean, gut, and remove the head and fins of a 700‑800 g cod fillet. Season both sides with salt, pepper, and your choice of herbs. Dredge the fish in flour and fry it in a skillet with half oil and half butter, or brush with oil and grill on a rack. Serve with anchovy butter and lettuce or roasted potatoes.
