Grilled Halloumi and Zucchini with Berry Salsa
Grilled Halloumi and Zucchini with Berry Salsa from Spoonsparrow is perfect for anyone who loves vegetarian grilling.
Ingredients
- 250 g blueberries
- 125 g blackberries
- 125 g currants
- 1 red chili pepper
- 1 Spring onion
- 2 sprigs Rosemary
- 2 tbsp balsamic vinegar
- 2 tsp Honey
- Salt
- Pepper
- 2 yellow zucchinis
- 2 tsp Olive oil
- 300 g Halloumi cheese
- coarse Sea salt

Select and wash the berries, halving them according to size. Wash the chili pepper, cut it lengthwise, remove seeds, and slice into thin strips. Trim, wash, dry, and slice the spring onion into fine rings. Wash rosemary, pat dry, and pluck the leaves.

Whisk balsamic vinegar with honey, chili strips, rosemary leaves, a pinch of salt, and pepper. Fold in berries and spring onions. Let the salsa rest for about 30 minutes.

Meanwhile, trim and wash zucchinis, cut them into thick ribbons, and brush lightly with oil. Slice Halloumi into approximately 5 mm thick strips. Grill both on a hot grill for 4–5 minutes per side.

Season zucchini with coarse sea salt and pepper, then serve together with Halloumi and the berry salsa.
