Grilled Chicken Skewers with Swiss Chard

Ingredients

  • 1 small stalk of leek
  • 500 g chicken meat
  • 6 tbsp soy sauce
  • 3 tbsp honey
  • a pinch of chili flakes
  • a pinch of ground ginger
  • 2 medium Swiss chard stems
  • 20 g Ginger
  • 3 tbsp Sesame oil
  • 100 ml dry white wine
  • 100 ml Vegetable broth
  • Salt
  • ground pepper (from the mill)

Instructions

    Slice the leek lengthwise and wash. Cut into pieces about 4 cm long. Wash the chicken and cut into bite‑sized cubes. Alternate threading the leek and chicken onto skewers. Warm the soy sauce slightly and stir in the honey. Season with chili and ginger. Place the skewers in a shallow dish, pour over the cooled soy mixture, and marinate for 1–2 hours.

    Wash the Swiss chard thoroughly. Peel and finely grate the ginger. Sauté in 1 tbsp hot oil. Deglaze with white wine and broth. Add the Swiss chard and let it wilt. Season with salt and pepper and remove from heat.

    Sear the skewers in a pan with the remaining hot oil, cooking all sides for about 5 minutes until done. Plate with the Swiss chard and garnish with dill flowers if desired.
