Grilled Chicken Schnitzel
Grilled chicken schnitzel with zucchini mint salad: chicken breast fillet contains high-quality protein. Olive oil is good for the heart.
Ingredients
- 350 g large zucchini (1 large zucchini)
- Salt
- 12 Cherry tomatoes
- 1 Red Onion
- 0.5 lemon
- 3 sprigs Mint
- 300 g chicken breast fillet
- Pepper
- 2 tbsp olive oil
- 1 pinch coconut blossom sugar

Wash, trim and julienne the zucchini lengthwise; lightly salt in a bowl and let stand for about 10 minutes.

Wash cherry tomatoes and halve them. Peel onion and slice thinly. Squeeze lemon juice. Wash mint, shake dry, pluck leaves and roughly chop.

Rinse chicken breast fillet, pat dry and cut diagonally into thin slices; season with salt and pepper. Heat a grill pan, brush with 2 tsp oil and grill the schnitzel for 1–2 minutes on each side.

Drain zucchini and gently squeeze out excess water; mix with onion strips, tomatoes, lemon juice, remaining oil, pepper, coconut blossom sugar and mint. Plate salad and serve with chicken schnitzels.
