Grilled Cheese & Vegetable Skewers

These tasty cheese‑vegetable skewers from Spoonsparrow can be easily varied and are good to prepare in advance.

Ingredients

  • 2 red bell peppers
  • 2 red onions
  • 2 zucchinis
  • 400 g Hokkaido pumpkin
  • 400 g feta cheese
  • 2 chili peppers
  • 2 Garlic cloves
  • 1 tbsp chopped parsley
  • 1 tbsp thyme
  • 4 tbsp olive oil
  • Salt
  • freshly ground pepper

Instructions

    Wash the bell peppers, halve them, deseed, and cut into bite‑sized cubes. Peel the onions and slice into wedges. Wash the zucchinis, trim them, and cut into thick slices. Peel the pumpkin and cube it; also cube the feta.

    For the marinate, wash the chili peppers, halve them lengthwise, remove seeds, and finely chop.

    Peel the garlic and finely chop it as well. Combine the chili, herbs, and olive oil.

    Thread the vegetables and cheese alternately onto 12 skewers and place them in the marinade. Let rest for at least 2 hours, then season with salt and pepper and grill on a hot grill, turning occasionally for about 4–5 minutes.
