  • 500 g Green Asparagus
  • 300 g black sea bass fillets
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp lemon juice
  • flour
  • radicchio
  • 2 tbsp butter
  • 2 tsp Olive oil
  • 2 tbsp blueberries
  • 0.5 tsp pink peppercorns

Instructions

    Preheat the oven to 80°C with top and bottom heat.

    Wash the asparagus, peel the lower half, trim the ends and cut lengthwise in half.

  3. 3.

    Season the black sea bass fillets with salt, pepper and lemon juice.

  4. 4.

    Sear the asparagus in 1 tbsp butter with 1 tsp olive oil in a pan for 3-4 minutes, seasoning with salt and pepper, then keep warm in the oven.

    Lightly dust the black sea bass fillets with flour. Heat the remaining butter and olive oil in the pan and brown each side of the fillets for about 2-3 minutes; keep them warm in the oven as well.

    Split radicchio into leaves and arrange on a plate with blueberries, then place the asparagus and black sea bass fillets on top. Sprinkle with crushed pink peppercorns before serving.
