Green Vegetable Stew with Ham

Ingredients
- 400 g Brussels sprouts
- 1 Zucchini
- 200 g peas
- 200 g potatoes
- 2 Garlic cloves
- 1 handful spinach
- 150 g turkey ham
- Salt
- black pepper (freshly ground)
- Nutmeg (freshly grated)
- a splash lemon juice
- 2 tbsp chopped basil
Instructions

Clean and halve the Brussels sprouts.

Wash the zucchini, cut it lengthwise into halves and slice into rounds.

Peel the potatoes and dice them.

Peel the garlic and finely chop it.

Wash the spinach, clean it and cut into strips.

Slice the turkey ham into strips.

Bring vegetable broth to a boil, add the Brussels sprouts, garlic and potatoes, and simmer for about 20 minutes. Then add the peas, spinach (except for 2 tbsp) and zucchini and cook for another 10-15 minutes, stirring occasionally. Remove half of the vegetables from the pot and mash the rest. Return the mashed portion to the pot, add the remaining vegetables and mix in the turkey ham. The stew should thicken; adjust the liquid as needed. Season with salt, pepper, nutmeg and lemon juice, then ladle into preheated bowls. Garnish with the remaining spinach and basil before serving.
