Green Pesto

Green Pesto from Spoonsparrow pairs well with classic pasta dishes for a family dinner!

Ingredients

  • 40 g pine nuts
  • 1 Garlic clove
  • 50 g basil (1 bunch)
  • 10 tbsp olive oil
  • 40 g Parmesan cheese
  • Sea salt

Instructions

    Roast the pine nuts in a dry pan over low heat until lightly browned. Remove and let cool.

    Wash the basil leaves, pat them dry, and strip the leaves from the stems.

    In a mortar, crush the peeled garlic clove with a pinch of sea salt and the roasted pine nuts. Add the basil, grind, then fold in finely grated parmesan cheese. Continue crushing while gradually adding olive oil until a smooth pesto forms. Season the green pesto with additional salt to taste.
