Green Gazpacho

Ingredients

  • 150 g bread
  • 75 ml olive oil
  • 4 Garlic cloves
  • 750 g green tomatoes
  • 0.5 cucumber
  • 1 green bell pepper
  • 250 ml vegetable broth
  • Salt
  • ground black pepper
  • 1 tbsp red wine vinegar
  • 4 tbsp diced vegetables (tomato, cucumber, pepper…)
  • parsley for garnish

Instructions

    Tear the bread into small pieces, place in a bowl and drizzle with oil. Peel the garlic and press it onto the bread.

    Wash the tomatoes, remove stems, score the underside crosswise, blanch for a few seconds, then cool, peel, quarter, seed, and dice. Add to a blender.

    Peel the cucumber, halve, deseed, roughly chop, and add to the blender with the tomatoes. Wash, trim, halve, deseed, remove white skin from the pepper, roughly cut, and add to the blender as well. Add the soaked bread and vegetable broth, then blend until smooth; adjust consistency with more or less broth if needed.

    Season with salt, pepper, and vinegar. Pour the gazpacho into glasses and garnish with diced vegetables and parsley before serving.
