Green Asparagus with Chicken Breast
Green asparagus with chicken breast and spicy scrambled eggs: a great trio ready in just 15 minutes! The sliced chicken and eggs provide satisfying protein.
Ingredients
- 500 g Green Asparagus
- 1 tbsp Olive Oil
- Salt
- a pinch coconut blossom sugar
- 4 eggs
- 2 tbsp ajvar
- 120 g smoked chicken breast slices
- Pepper
Instructions

Wash the asparagus and drain. Peel the lower third of each stalk and trim the ends.

Heat olive oil in a large non‑stick pan. Sauté the asparagus for about 10 minutes over medium heat, turning occasionally. Season with salt and coconut blossom sugar.

Meanwhile whisk the eggs in a small bowl with Ajvar and salt.

Heat a small non‑stick pan, pour in the egg mixture, and cook on low heat for 3–5 minutes, gently pushing from outside to inside with a spatula as it sets.

Slice the smoked chicken breast into about 1 cm wide strips. Season the cooked asparagus with salt and pepper. Plate the asparagus topped with scrambled eggs and chicken strips and serve.
