Green Asparagus Salad with Goat Cheese

Ingredients
- 400 g green asparagus
- 1 bunch arugula
- 200 g Cherry tomatoes
- 100 g large black olives
- 3 tbsp white balsamic vinegar
- 5 tbsp olive oil
- Salt
- black pepper (freshly ground)
- 4 slices goat cheese (about 1.5 cm thick)
- 4 slices baguette
Instructions

Wash the asparagus, peel the lower third and trim the ends, halve the spears and cook in boiling salted water for about 10 minutes, drain, rinse with cold water and let drain.

Wash the arugula, rinse, dry by spinning and cut into smaller pieces if desired. Wash the tomatoes and halve them.

Whisk vinegar with 4 tbsp olive oil, salt and pepper.

Toast baguette slices in a hot oven (220°C). Remove, place one slice of goat cheese on each, drizzle with remaining olive oil, season with pepper and return to the oven until the cheese begins to melt.

Arrange arugula with asparagus, tomatoes and olives on plates, drizzle with salad dressing and top the baguette slices with goat cheese.
