Ingredients
- 1 onion
- 1 tsp butter
- 2 tbsp chopped parsley
- 400 g ground beef
- Salt
- black pepper (freshly ground)
- 2 tsp fresh thyme
- 6 tbsp Olive oil
- 500 g tomatoes
- 1 cucumber
- 1 small iceberg lettuce
- 2 tbsp white wine vinegar
- 60 g black olives

Peel the onion, finely dice it, and sauté in hot butter until translucent. Then mix with parsley, ground beef, a pinch of salt, pepper, and 1 tsp thyme; knead lightly. With damp hands, form about sixteen small balls and brown them in 2 tbsp hot oil.

Wash, quarter or eighth tomatoes; peel cucumber and slice it. Tear iceberg lettuce into leaves, wash, dry, and cut into smaller pieces.

Whisk vinegar, salt, pepper, and remaining oil together, then stir in the leftover thyme. Combine with prepared vegetables, add olives, season to taste, arrange meatballs on top, and serve.
