Gratinated Zucchini Rolls for Thermomix

The vegetarian low-carb dish with zucchini and tomato tastes light and satisfying.

Ingredients

  • 500 g large zucchini (2 large zucchinis)
  • 400 g chunky tomatoes
  • 125 g mozzarella (1 ball)
  • 80 g Parmesan
  • 1 pinch salt
  • 1 Garlic clove
  • 250 g ricotta
  • 125 g cottage cheese
  • 1 small handful parsley
  • 1 small handful basil
  • 0.5 tsp Chili flakes
  • 0.5 tsp Salt
  • 2 tsp pepper

Instructions

    Preheat oven to 200°C (convection).

    Use a gouge to slice zucchini lengthwise into thin strips.

  3. 3.

    Place on parchment-lined tray and lightly salt. Bake in preheated oven for about 5 minutes.

    Let drain on kitchen paper and pat dry slightly.

    Add chunky tomatoes to a baking dish.

    Grind parmesan in the mixer (10 sec./speed 8). Transfer to a bowl.

    For filling, chop one garlic clove (5 sec./speed 5).

    Add half of grated parmesan. Then add remaining filling ingredients and mix (10 sec./speed 8).

    Spoon mixture into the bowl with a spatula, stir until creamy (30 sec./speed 3).

  10. 10.

    Spread some filling on zucchini strips with a spatula and roll them up.

  11. 11.

    Arrange rolls in baking dish over chopped tomatoes.

  12. 12.

    Tear mozzarella by hand and scatter over rolls; sprinkle remaining parmesan.

    Bake in preheated oven for about 20 minutes, then enjoy.
