- 4 small leek stalks
- Salt
- Pepper
- 2 Eggs
- 125 g heavy cream
- 1 tbsp Lemon Juice
- nutmeg
- 200 g mozzarella
- butter

Clean the leeks, wash them and cut into about 10 cm pieces. Blanch in lightly salted water for about 2 minutes per batch, remove, shock in cold water, and drain. Slice the mozzarella. Beat the eggs with cream, season with salt, pepper, lemon juice, and nutmeg.

Layer the leek sticks in four small buttered baking dishes, pour over the egg-cream mixture, and top each with a slice of mozzarella. Bake in a preheated oven at 200 °C (fan) for about 15–20 minutes until golden brown.
