Ingredients

  • 2 kg white asparagus
  • Salt
  • 2 tbsp butter
  • 3 tbsp mixed finely chopped herbs (e.g., parsley, chervil, chives, watercress)
  • 2 Tomatoes
  • 100 g Sour cream
  • pepper (ground)
  • 100 g Emmental cheese (45% fat in milk)
  • 50 g whole-grain breadcrumbs (freshly grated)

Instructions

    Peel the asparagus and trim the ends. Blanch in a pot of boiling salted water for about 10 minutes, drain, and place in a baking dish.

    Melt butter, mix with herbs, and pour over the asparagus. Wash tomatoes, pat dry, slice, and arrange on top. Whisk sour cream with salt and pepper, then pour over the asparagus. Grate Emmental cheese and sprinkle breadcrumbs over the top.
