  • 800 g starchy potatoes
  • Salt
  • freshly grated nutmeg
  • 2 Eggs
  • 4 tbsp spelt flour
  • butter for frying

Instructions

  1. 1.

Wash the apples, dry, quarter, core and dice them. Mix with cane sugar, lemon juice and spices; bring to a boil in a pot, then deglaze with apple juice. Simmer over medium heat for 5–7 minutes, remove from heat, discard spices and let cool. Blend smooth in a blender.

Peel, wash and grate the potatoes. Place grated potato in a kitchen towel and squeeze out excess moisture. Mix grating with nutmeg, salt, eggs and spelt flour. Heat a pan with butter and drop spoonfuls of potato mixture into it.

  3. 3.

Press flat and fry both sides over medium heat for about 4–5 minutes until golden brown. Remove and drain on paper towels. Arrange the grated potato cakes on plates and serve with apple sauce.
