Grand Marnier Soufflé

Ingredients
- 300 ml milk
- 100 g sugar
- 1 packet vanilla sugar
- 0.5 untreated orange (zest)
- 50 g flour
- 1 pinch salt
- 4 eggs
- 20 ml Grand Marnier
- 1 untreated orange
- 1 tbsp butter
- 1 tbsp fine breadcrumbs

Whisk the milk with sugar, vanilla sugar, salt, orange zest and flour vigorously, then gently heat while stirring until it boils once.

Place the pot in ice‑cold water to cool. Butter four ramekins and dust them with breadcrumbs. Separate the eggs; beat the yolks into the cooled mixture. Squeeze the orange, mix the juice with Grand Marnier and fold in.

Beat the egg whites stiffly, then gently fold into the batter. Fill the ramekins and bake at 180 °C for about 20 minutes. Remove immediately and serve.
