Ingredients

  • 4 goose legs
  • Salt
  • Pepper (freshly ground)
  • 1 onion
  • 2 carrots
  • 250 g celery root
  • 1 apple
  • 2 tbsp Vegetable oil
  • 1 sprig dried mugwort
  • 500 ml vegetable stock
  • 2 tbsp Orange juice
  • 1 tsp Honey

Instructions

    Preheat the oven to 200°C with fan and top heat.

    Wash, pat dry, salt and pepper the goose legs. Peel and dice the onion, carrots, celery root, and apple. Sauté the diced vegetables in hot oil in a roasting pan for 2-3 minutes.

    Place the goose parts on top of the vegetables in the roasting pan, add the mugwort, pour in half the vegetable stock, put the pan in the oven and roast for about 1.5 hours, turning the meat occasionally and basting with stock.

    Warm the orange juice and dissolve the honey in it. Brush this mixture over the goose parts and continue cooking for another 20-30 minutes. Remove from the oven and keep warm. Strain the remaining stock, season to taste, and thicken with flour if desired.

    Serve the goose legs with sauce on a plate, accompanied by sauerkraut and nut dumplings.
